Been a LONG Time...

I haven't posted anything on here in OVER A YEAR!  A lot has happened, but not too much in brewing-related stuff.

I did get married, which I brewed beer for (35 total gallons), so that should have been posted on here.  It obviously wasn't.  I have not been the best at keeping this blog up-to-date and probably will never be the best at it.

I will say that, for now, I will try to post brewing-related things when I do them.  Hopefully that will be more often than not, and will start up again soon.  I have a few things that will be mentioned in the next week or two, I am hoping.

Kegged & Cleaned

Got some kegging done yesterday!  FINALLY kegged my "Up The Kriek"...this one is going to be good once it's carbonated!  I also kegged the Psycho Killer (Qu'est Que C'est) Biere de Garde...I think this one is going to be tasty as well...they both smelled, looked and tasted pretty good going into the kegs!

I then cleaned up all that equipment.

That was pretty much all the time I had this weekend for beer stuff!  Will be brewing again soon...I have the following 4 beers in line to make:

Cream Ale
Robust Porter - to be aged on Scotch-Aged Oak cubes
Brown Ale
Oud Bruin

All of these still need names, but I will get to that sometime soon as well.  I know I am beginning to think I need a bigger kegerator!

Been Doin' Some Brewin'!

Well, it's been quite a while since I've posted anything new on here...as mentioned in the previous entry "It's Been a While", having a newborn around doesn't really allow for much free time.  That being said, I took a couple days off for my birthday last week and, miracle of miracles, I BREWED BEER!!

5 Gallons of my newest creation "Psycho Killer (Qu'est Que C'est)" which is, if you haven't guessed, a French-style beer known as a Biere de Garde.  Here's the recipe:

10 lb.    Pilsner Malt (Best Malz)
5 lb.      Maris Otter Pale Malt (Thomas Fawcett)
.5 lb.     Belgian Biscuit Malt
.25 lb.   Crystal Malt I - 45 L (Thomas Fawcett)

1.2 oz.   Strisselspalt Hops @ 75
.7 oz.     Strisselspalt Hops @ 20

Wyeast 3711 French Saison

I mashed at 148*F for 60 minutes and then ran off 8 gallons of pre-boil wort.  Boiled for 75 minutes, adding hops at the noted times.  I boiled this hard and got it down to about 5.5 gallons of finished wort.  Chilled to 65*F, pitched yeast and set it up to ferment. 

Had a good fermentation going within 12 hours with visible airlock activity - had a 1" thick krausen at about 16 hours.  This is starting to wind down now and I will let it sit to clean itself up as I fermented a little on the cool side for the yeast (between 65-70).

This one should be kegged in a couple weeks!

It's Been a While...

Well, the New Year is here...here's what has happened since last I typed:

Christian's Brew-

It got bottled just in time!  Bottled the beer on 12/8.  Christian was born on 12/24/12 at 1:11p.  He and Mom are both doing GREAT!  It is carbonated finally, the labels have been made and the first two bottles we handed out last week.  Now I just need to take the time to label some to take to family and friends...

Up The Kriek-

Still sitting...thinking I will get this one either kegged or bottled in late February.  I'm in no rush...

Game of Thrones Mead-

My brother decided that he wanted a mead made that was like those they drink on the TV show "Game of Thrones".  So, we started a 2 gallon batch using some interesting ingredients.  I will post a whole different thread about that once it's finished.  We are also going to be brewing a beer similar to what would have been available in those times as well.  I will be using current methods and sanitation, so it will not be historically 100% accurate, but I will use as close of a recipe as I can find.

Really, a whole lot has happened since November 26th...this is really just the recap of things alcohol related.

I think as I have started a new chapter of my life, there may be a little less time to devote to my hobby...at least until Spring.  Until then you may see a ramble here or there, but I will attempt to get better once things start getting less hectic around the house!
